Groundhog Day Treats

Updated: Feb 3, 2021

I was changing the classroom calendar we have up since we are doing "zoom school" at home, and I noticed the cute little groundhog square to put on February 2nd. I remember when my oldest son was in preschool they had a Punxsutawney Phil themed week with all kinds of adorable activities and treats. It looks like my 4 year old's teacher planned some Groundhog's Day activities but I was thinking...hmm I should at least make a treat. Then my brain said, "This is very little notice. Maybe add this to your yearly calendar of activities for 2022, and move on to Super Bowl party prep." But the idea wouldn't get out of my head. So, I've been searching the internet for groundhog treats with supplies I probably have in my cabinet or I can get tomorrow from Instacart. (If you don't have Instacart, it really is so convenient with how busy the week gets with work and kids at home. Use this link to get $10 off your first order of $35 when you sign up. https://inst.cr/t/UVluUTk2WHRY )

$35 does not include alcohol purchases.

I thought I'd share what I've found in case you are also inclined to take on last minute challenges.

GROUNDHOG PUDDING CUPS from My Recipe Magic

GROUNDHOG DAY PANCAKES from The Joys of Boys

Groundhog Day Toast by Fork and Beans

If you come up with your own version of any of these treats send them to me!! And, I will certainly add this to my master calendar so I can plan early next year.

**UPDATE**

Here's what I ended up doing!
