Want to try something you've probably never had on Valentine's Day? Do you love pancakes or waffles for dessert? Try this cake.
Last year, I saw a waffle cake on Pinterest and I had to have one for my birthday. I told my mom about it and she made her own version of a waffle cake that just happens to be perfect for Valentine's Day.
Ingredients:
CAKE 🍰
8 tablespoons of butter (1 stick) + some to prepare pans.
1/2 cup of brown sugar
1 1/2 cups of maple syrup
3 large eggs
2 3/4 cups of all purpose flour + a little to prepare pans
1 tablespoon of baking powder
1/4 teaspoon of salt
1 1/4 cup of buttermilk
1 teaspoon vanilla extract
8 ounces of cream cheese (1 block)
1/4 cup of powdered sugar
1 cup of pancake syrup
**Optional**If you wanted to make it more Valentinesy maybe add chopped strawberries to the cream cheese, or serve them on the side.
WAFFLES 🧇
Make your own waffles with your favorite recipe or mix. If you want to make some pink that would be cute too. Here is a link to food coloring without artificial dyes. https://amzn.to/3aMVvU6. Make the Cake!
Preheat oven to 350. Butter and lightly flour 3 8inch round pans. (If you have heart shaped pans how cute would that be! But you make have to arrange waffles differently for aesthetics)
Beat butter and brown sugar. (best with a kitchen aid paddle but use what you have.)
Add maple to sugar. Beat.
Add eggs, one at a time, continuing to beat. Set aside.
In another bowl, mix dry ingredients.
Slowly add dry ingredients to the previously combined wet ingredients. Beat.
Beat in buttermilk and vanilla.
Fill the 8 inch pans evenly.
Lightly press one waffle into top of each batter.
Bake 20 to 25 minutes. (If it starts to get too brown, you can cover with foil.)
Cool on a wire rack. Store layers in plastic wrap and refrigerate until ready to layer.
To make cream cheese filling, simply beat together softened cream cheese and powdered sugar. (Optional- add chopped strawberries.🍓) Store in refrigerator until ready to layer.
LAYERING DIRECTIONS
Set out layers and cream cheese 30 minutes prior to layering. To assemble, plate one layer, drizzle some of the pancake syrup on top. Spread cream cheese mixture. Repeat with layer two. Drizzle syrup on top layer.
I've had the cake both at room temp and cold. I couldn't decide which I liked better. Try refrigerating leftovers and see what you think!
